Specially formulated coating for application by hand or machine process on the cheeses. Quick drying. The dry film does not transfer odour nor taste whatsoever to the piece, being totally atoxic. Retains the aroma and flavour of the covered product. Does not penetrate into the product, forming on its surface a highly cohesive layer which regulates the drying of the cheese and at the same time it preserves it from external contaminating agents. It gives an attractive, hygienic presentation to the covered cheese. Any dry film which adheres to the metallic parts of the application equipment can easily be removed with hot water under pressure, thanks to its slightly hydrophilic nature.
